Sambar for Idli – Mangalore style
1 cup coconut grated
5-6 red dry chillies
1/2 tsp jeera
1 tsp daniya seeds
Pinch of turmeric
Tamarind – small lemon size
Urad daal – 1/2 tsp
Mente – 1/3 tsp
Few varieties of Vegetables (Check Picture) – Include Mangalore cucumber or white pumpkin
Jaggery – small piece
Fry all the ingredients, coconut, red chillies, jeera, daniya, mente, urad daal
In a blender put all the above fried ingredients along with tamarind, turmeric, jaggery
Adding little water make a smooth paste.
In a pan boil the mixed vegetables separately when they are almost cooked 90% add the above masala
Allow it to boil for 10 minutes
Season it with oil, mustard seeds and curry leaves.
Serve it hot with idli.
